Who got an Instant Pot for Christmas? I bought this on Prime Day earlier in the year and it was by far, one of my best purchases of 2016. Instant Pot IP-DUO60 7-in-1 Multi-Functional Pressure Cooker, 6Qt/1000W. I will share if it goes down again, but for now, $99.99 is still a good deal. I have a few recipes that are tried and true that I will share in the comments here soon, but I would LOVE it if anyone else shared your favorite recipes in the comments too please!
I LOVE mine! Honestly, I never thought I needed another kitchen gadget. Now, I won't go back. The biggest things are being able to cook something from frozen (cuz busy women or men &/or mom's always forget to thaw) and still make it taste amazing! Also, being able to cook something in 1 hour that normally takes me 6 or 2 hours that normally takes me 24. It's a win! Also, I'll be watching for when it goes on sale again, but last year, it was just Prime Day (in July) and after Thanksgiving/around Christmas, so if you want it before July, $99.99 is a better deal than it may likely be until then.

Roast, Potatoes, Carrots & Gravy

Olive oil the pan & push the Sauté button. Sear all sides of the roast (approximately 5 lbs works great) when it says hot. Deglaze with broth. I use 32 oz of beef broth usually. Add the wire tray and then the roast. Then I use a full packet of Onion Soup mix to sprinkle over. Then I chop 2 onions & throw them in. Then I add just a small amount of salt & pepper.
When I have a fresh roast, I use the 45 minute manual setting, but if you have a frozen roast, you'll probably want to do about 50-60 minutes. Use the quick release method, then you open & add baby carrots & baby potatoes. I add a bag of baby carrots and a partial bag of the baby new potatoes from Costco until it is full.
Then I cook it on Manual for another 10 minutes and use the quick release method when done, but you can totally use the slow release if you want the potatoes and carrots softer.
Then I pull out the roast, potatoes & carrots onto a large tray. My onions are in chunks so I just leave them in while I made my gravy, but you could pull them out if they're just sliced and in big pieces.
I then use the Sauté function again. I turn it on to get my drippings boiling. I added about 4-5 tablespoons of corn starch to a small amount of water & whisk it into my drippings until boiling and the proper consistency to make gravy. I'm not usually worried about onions or lumps - it all tastes awesome no matter what. Then you can salt & pepper to taste.

Use 4-7 lbs of pork should cut into 3-4 sections (this helps especially when it's frozen). Olive oil the pan & push the Sauté button. Sear all sides of the pork. Deglaze with broth. I use 32 oz of chicken broth usually, but beef works too. Plus, you can even use water if you're aiming a little healthier.
Add the wire tray in to lift the pork easily after. Then add the pieces of pork back in. Dump in a bottle of Liquid Smoke (Wrights or Colgin work fine). Then coat all of your meat with Himalayan Sea Salt. It usually ends up being about 1/8 cup which seems like a lot, but it makes the flavor awesome!
Close it up and cook on manual for 90-100 minutes, depending on the size (and 100-120 minutes if it's frozen & especially if it's not in sections). I actually like to let it slow release, so the pork pulls even better, but you can quick release if you're in a hurry.
When you open it up, you can pull it out onto a tray and shred it or leave it in the juice and shred it there. A mixer works great to shred it quick. If it doesn't shred easily, you could probably put it back in and cook it longer if you have time, but it still tastes good, it just won't be as tender.
Then serve over sticky rice (I like the white Botan brand). You can cook rice in the IP, but I've kept my rice cooker just because I can do it at the same time. I may just end up getting a 2nd IP one of these days and completely replace my rice cooker and slow cooker.
